Recipe for the caramelized Torrija


  • 2 milk or brioche bread
  • 125 gr sugar
  • 60 gr milk
  • 20 g condensed milk
  • 3 gr lemon zest
  • 2 whole eggs
  • Olive or sunflower oil 150 gr

-First step

Cut the milk bread in two parts by removing the ends.

And dry at room temperature for 1 day.

-Second step

We beat the eggs

We place a bowl or deep dish with the beaten egg and set aside, we also use a bowl with milk and another one with condensed milk and another one with sugar for after the breading.

We bathe the breads in milk and soak them well.
We drain

And we pass to overflow it in the egg, in the meantime we will add the oil in a pan for frying.
Once the bread has been covered by the egg

– Third step

Add the condensed milk, honey and lemon zest in a bowl.
And we bathe the torrijas.
Let stand for one hour in the condensed milk.
Then we drain well and overflow in sugar.
To finish by caramelizing with the help of a blowtorch.


Place the caramelized torrijas and grate lemon over them.
