Ismael Bilbao, soul and character of Samaruc and a true lover of cuisine with a touch of ingenuity. Originally from Seville and raised in the Triana neighborhood, he let his imagination and curiosity fly to Denia in 2013. But not before passing through great kitchens such as Can Fabes, in Sant Celoni, and working side by side with chef Santi Santamaría.

Together with his sister Lourdes Bilbao, he embarked on a new, more personal project in the heart of the Costa Blanca, which would allow him to express his personality through his culinary creations.

The result? A gastronomic proposal in which the environment and the local product play a fundamental role in very personal cooking and master classes in flavors and textures.

Although over time the brothers followed different paths, Ismael’s love for cooking has transcended to his children, who today are part of the Samaruc team.
