Ismael Bilbao, a true enthusiast of cuisine with a touch of ingenuity. Originally from Seville and raised in the Triana neighbourhood, he let his imagination and curiosity fly to Dénia in 2013. But not before passing through great kitchens such as Can Fabes, in Sant Celoni, and working side by side with chef Santi Santamaría. 

Together with his sister Lourdes Bilbao, he embarked on a new, more personal project in the heart of the Costa Blanca, which would allow him to express his personality through his culinary creations. 

The result? A gastronomic proposal in which the environment and local produce play a fundamental role in very personal cooking and master classes in flavours and textures. 

Although over time the brothers went their separate ways, Ismael's love of cooking has transcended to his children, who are now part of the Samaruc team.
